From garden to Michelin-starred table at the Ritz
In collaboration with the Ritz Paris, Saguez & Partners have imagined l’Espadon, a restaurant where culinary art becomes an immersive experience. Inspired by the legendary Auguste Escoffier, this intimate venue, conceived as a play in three acts, celebrates cooking in the garden. On the hotel’s roof, an aromatic garden supplies the kitchens with herbs and flowers, and just outside Paris, the hotel’s kitchen garden offers an abundance of freshly harvested vegetables. Theatrical staging: the Ritz unveils its Grand Secret Garden
The entrance, with its impressive 6-meter corridor, plunges visitors into a sensory experience celebrating Escoffier’s passion for wax flowers. Botanical decor and bas-reliefs of wax leaves and stucco, created by the artist Mona Oren, as well as lighting in golden hues and candlelight reflections, lend the space a mysterious character – a moment suspended in time, necessary to anticipate the show at hand.
The centerpiece of the restaurant, L’Espadon Lounge is a true theater offering a breathtaking view of 2 live stages: the open kitchen and the Ritz garden. The 85 m² space blends fabrics and copper moldings in perfect harmony with the exceptional architecture of the Ritz. Large windows adorned with silk curtains reveal views of the garden, while aged mirrors amplify the natural light.
The highlight of the show is the magnificent Bohemian crystal chandelier, designed in collaboration with Lasvit and Eugénie Beziat. It evokes an imaginary, culinary herbarium, with crystal leaves forming large volutes and golden imprints of aromatic herbs in the center of the room. To enhance the experience, a handcrafted cabinet with glass alembic allows the chef to serve plant- and flower-based concoctions, a creative complement to her exceptional cuisine.
The tree-lined terrace overlooking the Grand Jardin prefigures magical dinners under the stars. Nestled in the heart of the hotel, an aromatic garden provides fresh herbs and edible flowers for the kitchens.
